Home made Taco Shells

Mix togather 4 cups of wheat flour ( I mix 2 cups of white with 2 cups of spelt.) with 1/2 cup butter and 1 cup of water.

Divide the dough into balls and let them rest for ten minuites.

Roll each ball out into a circle on a floured surface.

Heat up a heavy pan on medium heat. I use cast iron. Put the shell onto the pan. Bubbles will form in the top of the shell, just poke the bubbles with a fork to pop them and flip the shell. Once your pan is heated it just takes seconds on each side to cook it. It is really easy to over cook the shells.

These will strore really well in the freezer. When I make them, I make a double batch so that half of them can be put in the freezer. We like to fill the shell with chicken and cheese and fry them on both sides in butter adding lettuce, green pepper, onion and taco seasoning after they it is cooked.
