Outside my window
We woke up this morning to several inches of snow and a severe wind. My sister has had a very long drive to work this morning! It should clear up a little before we are supposed to head out for our day.
The pictures below are from the ice storm we had at the end of last week.

Another cancellation today due to the weather. As much as I love being at home, even I am beginning to feel a little cooped in!
From my kitchen
And we have a winner!
Bean burgers!

We also enjoyed making home made onion rings this weekend. My husband raved about them so I thought I would share the recipe.
Slice the onion and separate into rings
preheat the oven and the pan (a little oil on the pan) to 400 degrees
in one bowl mix 1 egg and 1 cup of buttermilk whisking in 1/4 cup of flour and 1/8tsp of Cheyenne pepper
Then mix 1 cup of special k or cornflakes with 1/2 cup of bread in a food processor and pulse until the mixture is fine
Dip onion rings into first mix and then coat in second mix.
Lay them onto the pan and bake 16 minutes.

Friday: left overs and fridge clean out
Saturday: home made pizza
Sunday: bean burgers and onion rings
Monday: small group dinner
Tuesday: vegetarian sloppy joes (should be interesting!)
Wednesday: Black bean spicy soup (another interesting and hopefully good recipe)
Thursday: Stir Fry and Rice

I am reading
I hit the jack pot at the library the other day!
I was looking for a book called Living The Beautiful Life by Alexandra Stoddard and found not only it but also two other books by her; The Art of Possible and Feeling at Home.
I also picked up and have read Born Amish by Ruth Garrett.
On the recommendation of a friend I grabbed a book called Under the Banner of Heaven by Jon Krakauer. Unfortunately I was so mad just reading the preface that I put it down and more than likely won't pick it back up.
I am hearing
quiet, contented children jabbering away while they paint.
Around the house
The big project around our house was the moving of our DMS's bedroom into what was DOD's bedroom. This meant that DOD's things had to be boxed and put in storage. DYS's room had to be sorted through and moved and now the empty bedroom has to be prepared for the potential of children. We will be putting in bunk beds and a crib. I am glad we did not wait to make this move until we had a call because it has taken a significant amount of time and thought to make this change! Mr. built the loft bed over the stair case to help give the room more open space. It looks great!




A few plans for the rest of the week
Depending on weather! I need to finish sorting DYS's old room and get that space cleaned up.
